One of my favorite childhood memories is going to my grandpa's delicatessen and getting a sprinkle cookie from the bakery case.  The cookie was colorful, buttery, slightly lemony and just plain happy.  

Our version is softer and chewier than the cookie from my grandpa's deli but the result is the same...pure happy!
