We've based this cookie after one of our espresso bar holiday favorites. The ginger makes it slightly spicy; the molasses and espresso powder give a full-bodied flavor that's off-set by creamy, white chocolate. It gets a final sprinkle of sparkly white sugar because even cookies should look their best for the holidays!
