We based this one on my favorite supermarket ice cream sandwich (which puts vanilla ice cream between two oatmeal cookies and covers the whole thing in a thin chocolate glaze).  Our cookie version has oatmeal cookie wrapped around our vanilla ice cream cookie dough...and yes, it even gets a thin chocolate glaze.
