Rainbow Cookies are popular in Jewish and Italian delis. More of a bar cookie, it's got layers of red, white and green almond cake with a thin raspberry filling and is topped with chocolate glaze or sprinkles. 

We've layered almond cookie dough (yes, in three colors) with a bit of raspberry jam and rolled it in chocolate jimmies.
