My dad's absolute favorite dessert was Boston Cream Pie (our Peanut Brittle Cookie was a close second). Yellow cake, custard, and dark chocolate glaze might seem like a simple combination but they come together in a surprising way.
Our cookie version stays pretty close to its inspiration: rich, yellow cake cookie, ribbons of creamy, custardy filling, and dark chocolate glaze (it's the same one we use on our Black & White Cookie so you know it's good!). There really is something classic, unpretentious, and incredibly special about this cookie...a lot like my dad.
