We don't usually jump on trends, but the viral cakes-in-a-cup from Alex and Sondra Posner at Dot Cake in New York were just too much fun not to turn into a cookie.
We start with our chewy, slightly cakey, very vanilla-y Just Plain Sugar Cookie, add a generous schmear of vanilla icing, then finish it with a dip in crunchy rainbow nonpareils.
It's hard not to smile when you eat this one!
