I found my first recipe for Pineapple Upside-down Cake in "The Betty Crocker Cookbook for Boys & Girls" - a gift from my mother...probably to my sister but I used the book more and it's sitting in my kitchen today. 

This buttery cookie's got chunks of caramelized pineapple, lots of brown sugar, and a maraschino cherry on top. 

Ingredients
